Another lovely salad to make in the summer when the courgette flowers are available. Stoke Newington farmers market has them then or the great little Cypriot shop called Despina in North London.
8 fresh courgette flowers
1 buffalo milk mozzarella
4 salted anchovies or about 15 capers if you are vegetarian
Good drizzle olive oil
pepper
The only think you really need to do here is fry the flowers gently in a little olive oil. Give them a wipe first with a dry kitchen towel and have a quick look inside each as bugs like hiding there.
Once they are browned slightly but still with a good yellow and green colour, turn off the heat and assemble the salad. Mozzarella chunks first, topped with the flowers and then the anchovies or capers. Ground pepper over the top and a drizzle of the oil.
